There's More to Thanksgiving  than Turkey, Turkey

Side dishes make Thanksgiving a feast of color and taste. Orange sweet potatoes, ruby red beets, white cauliflower, and crimson cranberry sauce. While beautiful, it's a lot of food to prepare! 

Harvest Home understands the work involved, and we've put together a few fast, easy ways to have a tastier and healthier feast:

ONE: Start with FRESH fruits and veggies for better taste and color. They're also more nutritious! Find them at one of our markets in your neighborhood. Our produce is FRESH: Picked yesterday and delivered today, our fruits and veggies have better taste and more nutrition than what is in your supermarket. We also take SNAP, EBT, WIC and Healthbucks. Not to mention, our prices are better than most stores, giving you more for your hard-earned dollars!

TWO: Substitute olive oil for the butter normally used in dishes. For mashed potatoes, use ¾ of a Tbsp of olive oil in place of 1 Tbsp of butter to get silkier taters with a slightly nutty flavor. It's an easy way to reduce calories, add antioxidants for your immune system, get rid of the cholesterol and add vitamins E & K for heart health.

THREE: Cook two dishes at once! Getting that feast on the table isn't easy. There are always too many dishes and not enough room. To make life a little easier, roast your vegetables along with the turkey. Follow the recipe for Roasted Potatoes, Carrots, Parsnips and Brussels sprouts using your favorite root veggie and herbs. Slip them into the oven, one shelf below your turkey. Roasting not only makes cooking easier, but it locks in more nutrition.

Carrot, Apple & Beet Salad

Recipe

Ingredients

  • 1 large beet
  • 3 carrots
  • 2 apples
  • 1 tsp olive oil
  • 3 tsp apple cider vinegar 

Preparation

  • Grate beets, carrots and apples in a large bowl.

  • Add olive oil, vinegar and toss.

  • You may also cut veggies into small pieces rather than grate

Tips

  • Heat, light and air all affect olive oil in a negative way.
     
  • Olive oil is best stored in sealable metal tins or dark glass bottles to protect the oil from the light.
     
  • Use olive oil to cut down fat calories and get healthy fat you need.
